If your weekend plans do not consist of making cookies, they should! These are seriously some of the best cookies I have EVER eaten. They are rich and chocolately, with a hint of red wine in every bite. Whenever I make these they never stay around very long. They are what I call a happy cookie.
This is the recipe to a delicious weekend:
Dark Chocolate Red Wine Cookies
Recipe from Keep it simple foods
Ingredients
1 1/2 cups flour
3/4 cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 stick unsalted butter, softened
3/4 cup sugar
3/4 cup brown sugar, tightly packed
1 egg
1 teaspoon vanilla extract
1/2 cup red wine (any red wine will do)
1 bag (10 oz) dark chocolate chips (I like Ghiradelli, but they definitely increase the richness)
Directions
Preheat the oven to 375 degrees F. In a mixing bowl, combine the flour, cocoa powder, salt and baking soda. In a separate mixing bowl, use a hand mixer to cream together the butter and sugar. Add in the egg, vanilla extract and red wine. Mix until well combined. While continuing to mix, add the dry ingredients into the wet ingredients. Once the batter is mixed together, fold in the chocolate chips. Using a cookie scooper, spoon the the batter onto a cookie sheet. Bake for 8-10 minutes.
I suggest opting for a baking time of closer to 8 minutes. Otherwise, the bottom of them may end up looking like this...
Whoops. If there is anything Scofield doesn't like, it's burnt food. Thank goodness this was just the first sheet of cookies. I learned my lesson in time to save the rest of the dough. But don't get me wrong...this cookie was still delicious.
I think one of the best parts about baking is sharing with friends. It's one way I like to show love to people. Scofield is convinced, though, that I always give all of our baked goods away and don't leave any for him. Remember your birthday cookies? He must have forgotten. Hence, a whole batch of cookies for husband only, sealed and protected in a tupperware all his own.
So go and make these cookies already. You won't be sorry. But beware...they are slightly addicting. And by slightly, I meanly completely. Don't say I didn't warn you.
Even Mr. Owl, our cookie jar, has his eye on these suckers. He wants them in his tummy too. Good news Mr. Owl, that's exactly where they are going.
