These little bite-sized "cookies" make the perfect snack. Thanks to the chickpeas and peanut butter, they are packed full of protein to keep you full and satisfied.
Chickpea Chocolate Chip Cookie Dough Bites
adapted from Texanerin Baking
Ingredients:
- 1, 16-oz. can chickpeas, low sodium, drained and rinsed
- 1/2 cup + 2 tbsp. all-natural peanut butter (or other nut butter of your choice)
- 1/4 cup honey
- 1/4 cup brown sugar
- 2 tsp. vanilla extract
- 1 tsp. baking powder
- pinch of salt
- 1/2 cup dark chocolate chips
Preheat oven to 350 F. Add all ingredients, but chocolate chips, to a food processor and process until smooth. Transfer the dough to a mixing bowl and fold in chocolate chips. Roll the dough into 1 1/2" balls and place on a cookie sheet covered with parchment paper. Bake in the oven for 12 minutes. Remove from oven and enjoy while still warm!
