sunday soup

this sunday we enjoyed white bean soup from keep it simple foods.
the weather was BEAUTIFUL, so we took our lunch outdoors. 

White Bean Soup

slightly adapted from keep it simple foods
Ingredients:
  • 2 cans cannellini beans, drained and rinsed
  • juice of 2 limes
  • 3 garlic cloves, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 cups low sodium vegetable broth
  • 1/2 chopped yellow onion
  • 1/3 cup parmesan cheese
  • handful of cilantro, chopped
  • salt and pepper to taste
Heat the olive oil on medium heat in a pot. Add the garlic and onions until soft and translucent, about 5 minutes. Add the beans and lime juice. Cook for another 3-4 minutes. Add the vegetable broth and cilantro, and bring to a boil before reducing to a simmer. Stir in the cheese. Transfer to a blender, or magic bullet, and blend until smooth and creamy. (You may have to do this in batches). Transfer back to the pot on the stove to keep it warm. Serve with toast and top cheese some more parmesan cheese.
