if you are like me and find yourself frequently craving brownies, i have a nice solution for you. i shared some "healthy" brownies a few weeks ago, from paleomg, that incorporate sweet potatoes. this week, i have a brownie recipe i tried from ambitious kitchen that is made with black beans and avocado. i mean, sweettooth or not, these make a great snack! protein, fiber, vitamins, minerals...not to mention, they are gluten free. and if you are one of the many with a gluten allergy, i know you will appreciate them.
Avocado + Black Bean Brownies
- *1 can of black beans, rinsed and drained
- *1 egg + 2 egg whites
- *1/3 of a ripe avocado
- *1 tsp smart balance oil
- *1/3 cup + 1 tbsp unsweetened cocoa powder
- *1/4 tsp baking powder
- *1/4 tsp baking soda
- *1/4 tsp salt
- *1 tsp pure vanilla extract
- *3/4 cup raw turbinado sugar
- *1/2 cup dark chocolate chips
Preheat the oven to 350 F. Spray an 8x8 inch square baking pan. Combine all ingredients, but chocolate chips, into a food processor. Blend for 2-3 minutes until completely combined. Tranfer to the baking pan and stir in chocolate chips. Bake for 35-40 minutes. Remove from oven, let cool, and dig on in!
I'm baking these now, and the batter tastes SO GOOD! (I know, raw eggs...I just couldn't help myself.) Can't wait for the finished product to come out of the oven!
