thanksgiving staples

every year for thanksgiving, you can bet that we will have pineapple casserole and chocolate delight. for as long as i can remember, my mom has been making these two recipes and they are everyone's favorite. food can carry a lot of nostalgia, and i have a lot of fond memories eating chocolate delight together as a family over the holidays. you can find these two recipes below :)

pineapple casserole

serves 8

ingredients:
  • 2 cans crushed pineapple, drained
  • 3 tbsp. pineapple juice (from crushed pineapple can)
  • 1 cup sharp cheddar cheese, shredded
  • 1 sleeve ritz crackers
  • 1 stick butter
  • 1/3 cup flour
  • 1 cup sugar
preheat oven to 350 F. prepare a 8x8 inch casserole dish. combine the pineapple and cheddar cheese in a mixing bowl. in a sauce pan, melt the butter and add the ritz crackers. let sit on the stove top until browned. in a separate bowl, combine the flour, pineapple juice, and sugar. add to the pineapple mixture. stir half of the ritz cracker mixture into the pineapple mixture. add to the casserole dish and top with the remaining ritz crackers. bake for 30 minutes. remove, and serve warm.

chocolate delight

serves 12

ingredients:
  • 1 cup flour
  • 1 cup chopped pecans
  • 1/2 cup butter, softened
  • 1-8 oz. cream cheese, softened
  • 1 cup confectioners' sugar
  • 2 containers cool whip
  • 2-4 oz. packages instant chocolate pudding mix
  • 3 cups milk
preheat oven to 350 F. mix flour, chopped pecans, and butter together. press into a baking dish and bake for 20 minutes. mix cream cheese, confectioners' sugar, and cool whip. spread mixture on cooled crust and set aside. prepare instant pudding with milk. spread pudding on top of cream cheese mixture. top with cool whip and garnish with cocoa powder or chopped pecans.

  3. Pineapple casserole?? I'd never heard of it before but I'm intrigued by the salty + sweet + fruity combination. And the chocolate delight is another unheard of over here but it obviously sounds, well, delightful. (:
