Guacamole.

The only part of football season I truly enjoy is the guacamole.
Here's to this superfood that is super delicious.

Ingredients:

  • 1 lemon
  • 1/2 cup onion, diced (Here I used white, but red is the best!)
  • 2 roma tomatoes, diced
  • 1 clove garlic, minced
  • 3 ripe hass avocados, halved, seeded, and mashed
  • 1/2 tsp. salt
  • 3 tbsp. fresh cilantro, chopped
Begin by mashing the avocados in a bowl. Next, add the juice of one lemon to the avocado mash (watch out for seeds!). As you add the lemon juice, your avocados will blend easier becoming more and more like guacamole. Next, simply add all the ingredients to the avocados and mix, mix, mix until you reach your desired consistency. 

 It's so easy and only takes a few minutes....which is lucky for me because Scofield thinks it's the best thing ever (meaning I will be making it often!).
We used our guacamole as a salad topping. The best! This is Scofield's salad, hence the chicken.
And here is mine--complete with tortilla chips and corn. Yum!
