Pesto Tomato Salmon

I stumbled upon this recipe over the summer and fell in love. It has been a staple on our regular menu ever since. And it is SO quick and easy to make. I like to make it on nights when I know we will be busy or getting home late. It only takes about 15 minutes to prepare! Bam.
Basil Pesto Tomato Salmon

Ingredients:
  • 2 (6 oz) salmon filets
  • 2 Tbsp prepared basil pesto
  • 1 roma tomato
  • salt and pepper, to taste
Start by preheating your oven to 450 degrees F. 

Lay two sheets of aluminum foil on your baking pan and spray them with cooking spray. Place the salmon on top of the foil and top each with 1 tbsp basil pesto. Homemade tastes the best! It is totally worth the extra 5 minutes, but opting for store bought works just as great. Set the sliced roma tomatoes on each filet. Finish by seasoning with salt and pepper.

Fold the tin foil over the salmon so that it is completely sealed. Baked for 15 minutes. Remove from the oven and serve immediately. Watch out--the foil is hot!
We love to pair this entree with steamed broccoli. The broccoli steams while the salmon is cooking, making the side dish completely time efficient. Win-win.
