spinach pesto

A little pesto recipe to get you through any mid-week blues (and turn them green!).

Spinach Pesto

Ingredients:
  • 3 cups spinach leaves, packed
  • 1 tbsp. dried parsley
  • 1/2 cup pine nuts
  • 1/4 cup parmesan cheese
  • 2 garlic cloves
  • 2 tbsp. extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • juice from 1/2 lemon
Combine all of the ingredients in a food processor. Start with the 2 tbsp. of olive oil and blend, blend, blend. As you blend, pour more olive oil through the hole in the top of the processor until it reaches your desired consistency. I like mine with that little extra oil. Then your done! Dip or spread, but whatever you do, just enjoy!
