it is december, and i am one happy camper! seriously the most magical time of the year. the smell of holiday candles, cold weather, bundling up, warm socks, holiday lights, delicious baked goods .... it all gets me. i know, i know, its so very cheesy. but i really, really love it. we cut down our christmas tree earlier this week, so things are really starting to look up. not to mention i got more sleep over the thanksgiving holiday than i think i have this entire semester - man, i've needed it!

anywho, during these colder months, i really love to take clothes i keep in my closet from other seasons, like this polka dot button down,  and pair it with my warm winter wear, like hats and scarves. this scarf is definitely my favorite and keeps me warm in the coldest of weather. that new york weather had nothing on my last year ;). hope you are having a merry december so far!

thanksgiving 2014

this thanksgiving was full of travel for us. we left on wednesday to visit family in chapel hill, and then headed to charlotte thursday for time with more family. it was really nice to spend time with our loved ones that we don't typically get to see. i also slept more than i think i have a months, so that was a super bonus for me ;).

thanksgiving staples

every year for thanksgiving, you can bet that we will have pineapple casserole and chocolate delight. for as long as i can remember, my mom has been making these two recipes and they are everyone's favorite. food can carry a lot of nostalgia, and i have a lot of fond memories eating chocolate delight together as a family over the holidays. you can find these two recipes below :)

pineapple casserole

serves 8

ingredients:

• 2 cans crushed pineapple, drained
• 3 tbsp. pineapple juice (from crushed pineapple can)
• 1 cup sharp cheddar cheese, shredded
• 1 sleeve ritz crackers
• 1 stick butter
• 1/3 cup flour
• 1 cup sugar

preheat oven to 350 F. prepare a 8x8 inch casserole dish. combine the pineapple and cheddar cheese in a mixing bowl. in a sauce pan, melt the butter and add the ritz crackers. let sit on the stove top until browned. in a separate bowl, combine the flour, pineapple juice, and sugar. add to the pineapple mixture. stir half of the ritz cracker mixture into the pineapple mixture. add to the casserole dish and top with the remaining ritz crackers. bake for 30 minutes. remove, and serve warm.

chocolate delight

serves 12

ingredients:

• 1 cup flour
• 1 cup chopped pecans
• 1/2 cup butter, softened
• 1-8 oz. cream cheese, softened
• 1 cup confectioners' sugar
• 2 containers cool whip
• 2-4 oz. packages instant chocolate pudding mix
• 3 cups milk

preheat oven to 350 F. mix flour, chopped pecans, and butter together. press into a baking dish and bake for 20 minutes. mix cream cheese, confectioners' sugar, and cool whip. spread mixture on cooled crust and set aside. prepare instant pudding with milk. spread pudding on top of cream cheese mixture. top with cool whip and garnish with cocoa powder or chopped pecans.

it was cold and rainy over the weekend when we ventured into beufort for the day. that wasn't going to keep us down though. we dressed warm and headed out to explore. then we decided to go see a movie and stay indoors. so maybe it did get us down a little ;). we had both been wanting to see the hunger games, though, so it seemed like the perfect opportunity. but not until we walked along the water and took in the scenery for a bit. wishing we could go on little getaways every weekend!

a birthday getaway

this year, scofield and i spent my birthday on fripp island. we had sweet friends open up their beach house to us for the weekend, and we were so grateful! both of us have desparately needed a break, so it couldn't have come at a better time (also, it was my birthday, so that worked out too). the house was beautiful and cozy, and the view was to die for. we were right across the street from the ocean and there were bike paths and beautiful houses everywhere. fripp island is also a wildlife preserve, so we saw cranes and deer which was fun. we joked and said they were 'reindeer' since it is almost christmas and all ;).

on saturday we literally did nothing, and it was sooo nice! we slept in, cooked brunch, watched movie after movie, and then went on a golf cart ride and walked on the beach. on sunday we headed into town and explored beufort. i couldn't have felt more celebrated and loved. i am so thankful for my husband, and so thankful for generous friends who bless us so.

... but today happens to be my birthday!

i'm 24 today, but really i've felt 24 for a while. i'm not sure why ... but every time someone would ask me how old i am, i would always want to say 24. but i wasn't...i was 23. now i'm 24. maybe it's a sign that 24 is going to be a good year? i sure hope so.

around here

just a little glimpse into things around here lately. and apparently all we've been doing is eating ;). what can i say ... the holiday season is approaching and i love to bake. but then of course, i come to the realization that we can't just live off of sugar. so enter, side left, brussels sprouts and apple slices.
